Lemon Garlic Shrimp with Zucchini Noodles

Ingredients
- 1 pound Large shrimp Peeled and deveined
- 2 tbsp Olive oil Extra virgin preferred
- 3 cloves Garlic Minced
- 1 medium Zucchini Spiralized
- 1 tbsp Lemon juice Freshly squeezed
- 1 tsp Lemon zest Fresh
- 1 tsp Red pepper flakes Optional
- 1 tsp Salt To taste
- 1 tsp Black pepper To taste
- 2 tbsp Fresh parsley Chopped, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, salt, and black pepper. Cook for 3-4 minutes until the shrimp turn pink and opaque.
- Toss in the spiralized zucchini and red pepper flakes. Cook for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.
- Remove from heat. Stir in lemon juice and zest.
- Garnish with fresh parsley and serve immediately.
Notes
- You can use raw or frozen shrimp/prawns. To defrost, I place frozen shrimp in a bowl of hot water and it’s usually ready to use in about 10 minutes. You can also defrost overnight in the fridge.
- I recommend 2 small or 1 large/medium zucchini per serving.
