Ingredients

  • 1 pound Large shrimp Peeled and deveined
  • 2 tbsp Olive oil Extra virgin preferred
  • 3 cloves Garlic Minced
  • 1 medium Zucchini Spiralized
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tsp Lemon zest Fresh
  • 1 tsp Red pepper flakes Optional
  • 1 tsp Salt To taste
  • 1 tsp Black pepper To taste
  • 2 tbsp Fresh parsley Chopped, for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, salt, and black pepper. Cook for 3-4 minutes until the shrimp turn pink and opaque.
  • Toss in the spiralized zucchini and red pepper flakes. Cook for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.
  • Remove from heat. Stir in lemon juice and zest.
  • Garnish with fresh parsley and serve immediately.

Notes

  • You can use raw or frozen shrimp/prawns. To defrost, I place frozen shrimp in a bowl of hot water and it’s usually ready to use in about 10 minutes. You can also defrost overnight in the fridge.
  • I recommend 2 small or 1 large/medium zucchini per serving.
